Recipe for a gluten-free dessert that is easy-to-make and is  gluten-free, vegan, and refined sugar-free.

We replaced :

-eggs with flax meal and water
-butter with coconut oil
-wheat flower with almond meal and gluten-free flour
-refined sugar wit maple syrup and coconut sugar
– cream cheese with cashews and tofu.

Ingredients:

Brownie Layer:

1 tsp pure vanilla extract
1/2 cup cocoa powder
1/4 tsp sea salt
3/4 tsp baking powder

2 tbsps. flax seed meal
5 tbsps. water
1/2 cup melted coconut oil
1/2 cup coconut sugar
1/4 cup maple syrup

1/4 cup almond meal
3/4 cup gluten-free all-purpose flour
2 tbsps. dark chocolate chips
1/3 cup chopped walnuts

Cheesecake Layer:

1 cup raw cashews, soaked in water for an hour and drained
1 cup coconut cream (from a can)

2/3 cup maple syrup
1 tsp pure vanilla extract
juice from 1 lemon
zest from 1 lemon
1 tbsp. melted coconut oil
8 ounces extra-firm silken tofu
1 tbsp. tapioca starch
1/4 tsp. sea salt

Preparation :
-preheat the oven to 350 degrees F

– line an 8×8 inch baking dish with parchment paper.

-mix the flax meal and water
-in a bigger  bowl, whisk the coconut oil, coconut sugar, maple syrup and vanilla and then add the previous  mixture.
– add the baking powder, gluten-free flour,the sea salt, cocoa powder,  and almond meal
-mix and pour into baking dish
-smooth  and sprinkle chocolate chips.

Preparation of cheesecake layer:

– blend everything until smooth,
-pour cheesecake layer over brownie layer,
-put in the  oven for 30 minutes,

-rotate the pan and bake for another 20 minutes or until it gets   slightly golden around the edges and slightly loose in the center.
-let it cool for 20 minutes in the room and then  in the fridge for 6 hours
