Here is one simple recipe that can be prepared  on the  stove top or  in a slow cooker by adding the chicken, enchilada sauce, chilies and onions .Simply add them and let them cook on low all day.

You can  make your own low carb  enchilada sauce:

Ingredients

  • 3 cups unsalted chicken broth
  • 3 tablespoons tomato paste
  • 1 bay leaf
  • 1/2 teaspoon granulated garlic
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon granulated erythritol
  • 1/4 teaspoon chipotle chile powder
  • 1/4 teaspoon instant coffee powder
  • 1/16 teaspoon ground clove
  • 1/16 teaspoon ground cinnamon
  • 1/4 cup pure chile powder
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 2 tablespoons ghee, butter or olive oil

Preparation:

  • put everything  into a frying pan on medium heat
  • simmer
  • stir occasionally, until it reduces by 1/3 .
  •  taste and adjust the seasonings  by your choice

KETO CHICKEN ENCHILADA BOWL

You need:

  • 2-3 chicken breasts
  • 3/4 cups red enchilada sauce
  • 1 12oz steam bag cauliflower rice
  • 1/4 cup water
  • 1/4 cup onion
  • 1 4 oz can green chiles
  • toppings(avocado, jalapeno, cheese, and roma tomatoes or whatever you like)
  • seasoning

Preparation:

  • on a  medium heat cook chicken breasts until lightly brown
  • add chiles, onions, water and the enchilada sauce
  • cover and reduce heat to simmer  until chicken is cooked through
  • shred the chicken and add  it back into sauce
  • continue simmering for  10 more  minutes (uncovered )
  • prepare cauliflower rice per bag instructions
  • serve and top it  with some of your favorite toppings( I personally love  avocado)
